A Queen In The Kitchen Episode #2 : Risotto Giallo Alla Milanese (Milanese Risotto) is now on You Tube and Vimeo.

Risotto giallo alla Milanese is a specialty dish of my hometown Milan (Italy), traditionally made with beef stock, raw bone marrow, butter, onion, Parmigiano Reggiano cheese, flavored and colored with saffron. The best varieties of rice for making a superb risotto are Carnaroli and Arborio.

Watch me preparing the Risotto giallo alla Milanese following my Nonna Fernanda’s recipe, included in my new cookbook “A Queen In The Kitchen”.

Fun Facts

In 1981 Gualtiero Marchesi, the Italian chef considered the founder of the Italian modern cuisine, added to this dish a gold foil over the risotto, as a sign of noble dish of the Italian cuisine.

  1. Great video as always! And a fantastic recipe that I know it’s sometimes a bit intimidating to people who haven’t made it before. I do have a trick that I would like to share and that I learned from my mother 🙂 In order to keep the rice at boiling temperature all throughout the cooking, I keep the stock simmering into a second pot. Also, instead of the cheese single, I use another little piece of butter: I stir that in at the end after turning off the heat.
