A Queen In The Kitchen – Estate Italiana: Milano

The day has arrived! After traveling during this summer through the most beautiful places in Italy, here we are with the the new episodes of  A Queen In The Kitchen, Estate Italiana (Italian Summer).

Visiting a new Country could be tricky and time consuming, especially when there is not much time available; so here are my suggestions to taste the real essence of this fascinating and polyhedric city. Milan is the capital of the Lombardy region and the second most populous city after Rome. Milan is the Italian capital of the finance, fashion, design, media and research. Milan is also the fifth most Michelin starred city in the world.

In this episode I’ll show you my TOP 8 things to see and to eat while visiting my beloved hometown Milano (Lombardy Region).

A Queen In The Kitchen : How To Make Ragù

Ragu’, the Italian meat sauce, is undoubtably one the most famous condiments of the Italian cuisine. Every family has its own recipe usually handed down for generations by grandmothers. In today’s episode of A Queen In the Kitchen I’ll show how to prepare my Nonna Fernanda’s ragu’.

Another recipe homemade, simple and delicious I have included in my very first cookbook A Queen In The Kitchen.

Ragu'

INGREDIENTS

5 tablespoons extra virgin olive oil

2 tablespoons unsalted butter

onion, carrot and celery, finely chopped

30 oz tomato sauce (vine ripened tomatoes)

1/2 pound ground beef

1/2 pound ground pork

salt and pepper, to taste

fresh basil (washed and dried)

 

DIRECTIONS

In a medium heavy-bottomed saucepan, put oil, butter, chopped vegetables and sauté until the onion became golden,

Reduce the heat then add the ground meats and cook briefly.

Add the tomato sauce, salt and pepper to taste and fresh basil.

Reduce the heat at low, cover the pan partially with the lid and allow to cook at least one hour. Remember to stir frequently. If the sauce becomes too thick add a a glass of warm water.

Toss over your favorite shape of pasta, homemade gnocchi or use it for preparing lasagne.

A Queen In The Kitchen : How To Make Crema Al Mascarpone (Mascarpone Cream)

Did you know that Mascarpone cheese is rich in vitamin A, important for eye health and the skin growth processes?

Mascarpone cheese is a traditional sweet and creamy Italian cheese originated in the city of Lodi, southwest of Milan (Italy). The name derives from the word mascherpa, that in Milanese dialect refers to a low-fat ricotta.

In the new episode of A Queen In The Kitchen, watch me preparing a traditional dessert from my hometown Milan : CREMA DI MASCARPONE (Mascarpone Cream). This cream is the same used for preparing the Tiramisu’ and as a filling for the Panettone (Christmas Sweet Bread) during the Christmas celebrations.

Watch me preparing Bruschetta (pronounced bruˈsketta), the Italian antipasto (starter) consisting of grilled bread rubbed with garlic and drizzled with extra virgin olive oil and salt. It can also be topped with tomato, basil, cured meats and cheese.

Bruschetta

Yield : 4 servings

Difficulty : easy

Prep Time : 10 min.

Cook Time : 4 min.

 

INGREDIENTS

4 slices country bread

1 garlic clove

3 small ripe tomatoes, diced

4 fresh basil leaves

2 tbsp extra virgin olive oil

salt and pepper, to taste

 

DIRECTIONS

In a bowl, combine diced tomatoes, fresh basil, extra virgin olive oil, salt and pepper. Set aside.

Grill the sliced bread in a cast iron skillet or outdoor grill until browned on both sides (2 minutes per side).

Rub each slice with the garlic clove.

Place some tomato mixture on top of each bread slice.

Serve right away.
