Christmas is approaching and for this year I decided to prepare delicious Italian festive cookies with a South American twist. For the cookie dough I used my favorite Italian shortbread recipe : Frolla Montata. I shaped the cookies with the  OXO GOOD GRIPS COOKIE PRESS using the Christmas Tree disk. This outstanding cookie press comes with 12 stainless steel patterned disks and it is incredibly easy to use and clean. I filled the cookies with delicious Dulce de Leche and as a results I got surprisingly cute and crumbly cookies, perfect to enjoy with a warm cup of tea or dunked in cappuccino or espresso.

Difficulty : easy

Prep Time : 20 min.

Cook Time : 8 min.

INGREDIENTS

3 cups + 3 tablespoons all-purpose flour

1 pinch of salt

9 ounces unsalted butter, softened

5 ounces powdered sugar, sifted

2 whole eggs

1 egg yolk

2 teaspoons  vanilla extract

holiday sprinkles, to garnish

8 ounces dulce de leche

powdered sugar, to dust

 

DIRECTIONS

Preheat oven at 325 F degrees.

Sift together flour and salt, set aside.

Cream the butter with a hand or stand mixer at medium speed until very smooth.

Slowly add the powered sugar and continue to mix until well blended.

Add eggs, egg yolk and vanilla extract.

Reduce the speed then add the flour little by little and mix until well incorporated.

Fill the cookie press with the cookie dough and set the Christmas tree disk as directed by the brand.

Press the dough over a baking sheet as is (no grease or parchment paper).

Sprinkle with Holiday sprinkles.

Bake for 8 minutes.

Remove from the oven, allow to cool for a couple of minutes in their baking sheet then move over a cooling wire rack and cool completely.

Fill half of the cookies with Dulce de Leche using a spoon or a pastry bag, then cover each cookies with the remaining half.

Dust with powdered sugar and enjoy!

    1. Hi Jeanie, thank you and Happy New Year!!! The Dulce de Leche I used for my recipe is a Mexican Store Bought Dulce De Leche that can be found at Mexican grocery store or specialty foods store.
