Pistachio Shortbread

Melt in your mouth texture, italian pistachio flavor, perfect with a hot cup of tea.


1 cup all-purpose flour, sifted
1/2 cup pistachio paste
1 stick cold butter
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 pinch of salt
confectioners’ sugar for dusting

Preheat oven at 325 degrees.
With a stand or hand mixer beat butter and sugar until creamy. Add the pistachio paste and vanilla extract. Add slowly the flour and salt and mix together with a wooden spoon until mixture is homogeneous.On a floured work surface, divide the dough in 4 balls and roll the dough with the hand in 4 “sausages” about 1 inch thick. Place the dough in the fridge for about 1 hour.
Cut the dough into a circles and place them on a baking sheet with parchment paper.
Bake for 15 minutes. let them cool on cooling rack, then dust with confectioners’ sugar
