Polish Pierogi with Potato Filling

This morning I’ve decided to do something I discovered when I moved to the US …and I really like it !!!
Pierogi are a typical Polish dish , and somehow reminds me  the Italian Ravioli.

This recipe makes about 25 Pierogi

Ingredients

for the dough:
2 cups al-purpose flour
2 eggs
few teaspoon of water

for the potato filling:
butter
1 medium-sized onion finely chopped
2 cups mashed potatoes, hot
salt pepper
1/2 cup grated sharp cheddar cheese
freshly grated Parmigiano Reggiano for garnish

Directions

Combine flour eggs and water to make a firm dough.Divide the dough and roll into thin sheets on a floured board.Cut into circles about 3 1/2 inches in diameter.
Meanwhile saute’ onion in butter until golden.Combine mashed potatoes, onion, Cheddar cheese, salt and pepper. Shape into little balls.Place the filling on half the circle of dough. Fold over and press edges together with the fingertips.
Place Pierogi into boiling salted water. Cook about 5 minutes. Remove from water with slotted spoon and serve with melted butter.
Garnish with Parmigiano Reggiano
