Nutella Mug Cake

Baby it’s cold outside, at least here in LA, and it’s World Nutella Day!!! Stay warm and spread the love by watching me preparing my fool-proof Nutella Mug Cake. It only takes few ingredients and a couple of minutes in the microwave to make this yummy treat.

Nutella is the world-famous hazelnut spread manufactured by the Italian company Ferrero.  The first jar of Nutella left the factory in Alba (Piedmont) on April 20, 1964. Nutella is now sold in over 160 countries, but every country has a different ingredient list.

I personally grew up eating Pane e Nutella (the original one) and its unmistakable taste means home to me.

Yields : 1 mug cake

Difficulty : easy

Prep Time : 5 min.

Cook Time : 2 min.

INGREDIENTS

2 tbsp all-purpose flour

1/4 tsp baking powder

1/4 cup Nutella

2 tbsp whole milk

1 egg

1 mug

DIRECTIONS

Place the flour in the mug.

Add the baking powder and mix.

Add the Nutella and the milk and stir until well combined.

Crack in the egg and stir until well blended.

Cook in the microwave for 2 minutes.

Dust with powdered sugar.

Enjoy warm.

Hazelnut Crème Brûlée…Happy Valentine’s Day!!!

Hazelnut Crème Brûlée is my way to celebrate the “sweetest” day of the year. Crème Brûlée is a French dessert consisting of a rich custard base, topped with a layer of caramelized sugar. I flavored this scrumptious dessert with hazelnut spread and garnished with organic fresh berries.

Servings : 6

Difficulty : easy

Prep Time : 15 min.+ 2 hours rest

Cook Time : 45 min.

 

INGREDIENTS

5 egg yolks

1/3 cup granulated sugar

1 tsp vanilla extract

1 pint heavy whipping cream, room temperature

6 tbsp hazelnut spread

granulated sugar, to sprinkle

 

DIRECTIONS

Preheat oven at 250 F degrees.

With a hand or stand mixer, beat egg yolks and sugar until white and frothy.

Stir in the vanilla extract.

Gradually add the heavy whipping cream and whisk until smooth.

Spread evenly a tablespoon of hazelnut spread on the bottom of each ramekin.

Pour the cream mixture into the prepared ramekins, filling them almost to the top.

Bake for about 45 minutes or until set but still trembling in the center.

Allow to cool at room temperature.

Let rest in the fridge for at least 2 hours.

Sprinkle each custard with a thin layer of granulated sugar and caramelize with a kitchen torch until a crispy top forms. (If you don’t have the torch, place the ramekins under the broiler for a couple of minutes)

Serve immediately accompanied with fresh berries.

If you prefer, you can substitute the Nutella with other hazelnut spreads available at your local groceries or deli stores.

Sbriciolata Alla Nutella (Nutella Crumb Cake)

To all the Nutella lovers, here is so far the best Nutella cake I’ve ever baked. Sbriciolata (literally crumbled) is a type of cake that holds a smooth filling (in this case Nutella) between two layers of crunchy shortcrust crumbs. The preparation of the dough is the same as for the Sbrisolona cake, the typical Lombard tart originated in the city of Mantua, crumbly in texture and rich in flavor.

Try the Sbriciolata also filled with :

  • ricotta and chocolate chips
  • pastry cream
  • apple
  • pumpkin
  • lemon curd

Servings : 6 to 8

Difficulty : easy

Prep Time : 20 min.

Cook Time : 35 min.

 

INGREDIENTS

2.5 cups flour type 00

1 pinch salt

8 gr vanilla baking powder (Bertolini or Paneangeli)

8 tbsp unsalted butter, cold

4.5 oz granulated sugar

1 egg, slightly beaten

1 small jar (13 oz) Nutella

powdered sugar, to dust

 

DIRECTIONS

Preheat oven at 350 F degree.

In a medium bowl, sift flour, salt and vanilla baking powder.

Add sugar and diced cold butter, work with your fingertips until a sandy mixture forms.

Add the egg and work briefly until the mixture tuns into big crumbs.

Line a 9 inch cake pan with parchment paper.

Place half of the crumb mixture into the cake pan.

Soften the Nutella for 30 seconds in the microwave then spread over the mixture.

Cover the Nutella with the remaining half crumb mixture.

Bake for 35 minutes.

Allow to cool completely in its pan.

Serve lightly dusted with powdered sugar.

Albuquerque The Nutella Turkey ….Happy Thanksgiving!!!

For this Thanksgioving I’ve prepared Albuquerque The Nutella Turkey, a very simple and delicious recipe that will put a smile on everyone’s face. I named it Albuquerque after the Thanksgiving song my daughter learned at school and constantly sings.

Prep Time : 15 mins.

Cook Time : 30 mins.

INGREDIENTS

2 puff pastry sheets (one 17.3 oz. box), thawed

1/2 cup nutella

1 egg yolk, slightly beaten

colored candies, to garnish

Utensils

1 baking sheet

2 sheets parchment paper

1 paring knife

1 metal tablespoon

1 pastry brush

DIRECTIONS

Preheat the oven at 400 F degrees.

Place one puff pastry sheet over a baking sheet lined with parchment paper.

With the help of a paring knife, shape the pastry into a turkey silhouette (body and legs)

Remove the excess of puff pastry and reserve it for later.

On another sheet of parchment paper, repeat the same procedure with the second puff pastry sheet.

With the back of a metal tablespoon, spread the first puff pastry turkey with Nutella leaving out 1/2 inch from the edges and the legs.

Overlap the first puff pastry turkey with the second puff pastry turkey. Refine the shape if needed.

For shaping the turkey feathers, make incisions in a radial pattern (1 inch wide) starting from the edges to center. Leave some space in the center to position head and neck.  Twist each puff pastry feather two times.

Shape some of the reserved  pastry into a log (5 inches long) , place it in the middle of the turkey and shape into a S.

Make the eye, the wattle and the beak  with colored candies.

Brush with the egg yolk

Bake for 30 minutes or until golden brown.

Turnovers are a type of pastries made by placing a filling on a piece of dough (in this case puff pastry), folding over, sealing, and baking it. In Italian we call them FAGOTTINI, literally small pockets. A Turnover can be sweet or savory. I filled my turnovers with yummy Nutella; a very quick recipe for busy moms and chocolate lovers.
