
Soon will be Halloween, then Thanksgiving and Christmas. And what’s the best treat for Christmas??? Cookies!!!
In my home town Milan, we use to bake these simple and delicious biscotti (cookies).
I prepare the dough and I rolled it out, and my daughter cut out into hearts, gingerbread mans & stars. We mix together Italian and American Christmas traditions, and the result was a batch of yummy cookies, all gone after a few hours.

Ingredients
125 gr Organic granulated sugar
100 gr unsalted butter, softened
1 pinch of salt
250 gr all-purpose flour
1 egg + 1 egg yolk
1 lemon zest
Directions
Bring all the ingredients at room temperature.
Preheat oven at 325 degrees.
In a large bowl, with a hand or stand mixer, beat the butter, sugar, lemon zest and a pinch of salt until smooth. Add the egg, and beat until well incorporated.
Add the flour and work everything with your hands until the dough is done. Make a ball with the dough and place in the refrigerator to rest for at least 2 hours.
Roll out the dough with a rolling pin on a lightly floured surface to obtain a layer of about an inch thick.
Cut out with cookie cutters and place the cookies on a baking sheet lined with parchment paper.
Brush only the surface of the cookie with the egg yolk mixed with a pinch of sugar.
Place in the oven and cook for 10 minutes or until slightly golden.
Allow to cool on a cooling rack.
