I love this recipe!!! The 4 C Cookies are chewy, delicate, sweet enough, perfect for a morning tea or afternoon snack.
As always a recipe Simple & Delicious 😉
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup organic brown sugar
1/2 cup organic evaporated cane sugar
1/2 tsp vanilla extract
1 cup unsweetened flaked coconut
1/2 cup semi-sweet chocolate chips
Preheat oven at 350 degrees.
Sift the flour, baking soda and salt, then set aside.
With a hand or stand mixer cream at medium speed butter, brown sugar, cane sugar until smooth. Beat in the egg, then add the vanilla extract. Reduce the speed and add the flour mixture then add the coconut flakes. Fold in the chocolate chips. Drop a ice cream spoon of cookie dough into a cookie sheet covered with parchment paper. Bake for 8 /10 minutes.
Let cool on a wire racks.
