I’m so happy, proud and excited to share with everyone my very second video recipe.
Today’s recipe : Kourabiedes,  delicious, melt-in-your-mouth cookies from Greece.

INGREDIENTS

1 pound unsalted butter, room temperature
1 cup confectioners’ sugar, sifted
2 egg yolks
1 tsp vanilla extract
1/5 pound ground almond
3 cups all-purpose flour
2 cups confectioners’ sugar, for dusting

 

DIRECTIONS

Preheat oven at 350 F degrees.

With a stand or hand mixer beat the butter at low speed for 10 minutes.

Add slowly 1 cup of confectioners’ sugar, two egg yolks, vanilla extract, and a little amount of flour.

Continue to beat, adding gently the ground almond  and the remaining flour until a soft dough forms.

Scrape the sides of the bowl and stir to make sure all ingredients are well blended.

Roll the dough into a golf-sized balls, place them on a baking sheet covered with parchment paper.

Bake for 10-15 minutes until slightly golden.

Remove cookies from the oven. Cool completely on a wire rack then dust with 2 cups of confectioners’ sugar.
