Lime Bundt Cake

Today I decided to celebrate the upcoming summer season making a delicious Lime Bundt Cake.

Ingredients

3 cups all-purpose flour
1/4 teaspoon salt
3 sticks unsalted butter, softened
8 ounces cream cheese, softened
3 cups granulated sugar
6 eggs
1 1/3 teaspoons vanilla extract
3 tablespoons fresh lime juice
2 tablespoons finely grated lime zest
confectioners’ sugar for dusting

Directions

Preheat oven at 325 degrees.
Grease and flour a bundt pan.
In a big bowl sift flour and salt together and set aside.
With a stand or hand electric mixer at medium speed beat butter, cream cheese until creamy, then add gradually the granulated sugar and continue beating until light and fluffy. Add the eggs one at a time, beating well after each addition, then beat in the vanilla and lime juice.
Reduce the speed to low and add slowly flour and salt mixture until incorporated. Using a rubber spatula, fold in the lime zest.
Pour the batter into the bundt pan and bake for around 1 hour and 15 minutes or until a toothpick inserted into the center comes out clean. Transfer the pan to a wire rack and let the cake cool in the pan for 10 minutes. Remove the cake from the cake pan and let cool completely on a cooling rack. Dust with confectioners’ sugar just before serving.

  1. It’s so delicious that it is difficult stop slicing it… It’s also Giuseppe’s favorite type of cake. I know, I have to wait for him till tomorrow!
