Melt-In-Your-Mouth Shortbread Cookies

…one of my favorite cookies, ever 😉


16 ounces (4 sticks) unsalted butter, cold
1 cups powdered sugar (sifted)
1/2 cup cornstarch (sifted)
1 teaspoon vanilla extract
3 cups all-purpose flour (sifted)


Preheat oven at 300 degrees. Whip butter and powdered sugar. Add cornstarch and vanilla, beat thoroughly. Then beat in flour, 1 cup at a time. Drop by teaspoonful onto cookie sheet. Bake for 20 minutes.
Allow to cool completely. Dust with powdered sugar if desired.

Makes about 4 dozens
