Classic Vanilla Mini-cupcakes with Classic Vanilla Buttercream Frosting

Classic Vanilla cupcakes with classic vanilla buttercream frosting


1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 eggs, room temperature
2 teaspoons vanilla extract
2/3 cup whole milk, room temperature


Preheat oven to 350 degrees. Line a cupcake pan with wrappers.
Sift together flour, baking powder, and salt and set aside.
In a big bowl beat butter and sugar until light and fluffy. Add the eggs one at a time, mixing just until blended. Beat in vanilla. Add the flour mixture , the milk and mix thoroughly.
Fill each cup 2/3 full and bake for 18 minutes for regular cupcakes and 12 minutes for mini cupcakes or until cake tester comes out clean. Cool completely and frost. Makes 12 cupcakes or 24 mini cupcakes.

Vanilla Buttercream Frosting


1 cup unsalted butter (2 sticks ), softened
3-4 cups confectioners (powdered) sugar, SIFTED
¼ teaspoon table salt
1 tablespoon vanilla extract
up to 4 tablespoons milk or heavy cream


Beat butter for a few minutes with hand mixer or stand mixer on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed. Then Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.
